Starches are reviewed by gelatinisation, viscosity, clarity and heat, shear, acid or freeze-thaw behaviour. Proteins are assessed by hydration, elasticity, solubility or dispersibility, while sweeteners are defined by DE, sweetness, solids, crystallisation and humectancy where relevant.
